Protein power balls
Turmeric is a natural anti-inflammatory and provides a delightful warmth to these fibre-rich date balls.-
Prep time:15 minutes
-
Serves:Makes 30 balls
Method
Soak the dates in hot water for several minutes until softened, then drain them – saving the water – and place in a food processor.
Add the other ingredients to the food processor with the dates and blend until the mixture turns into a dough-like consistency. Add a tablespoon of the reserved date water if the mixture is too dry.
With a small spoon, scoop the mixture and make into 30 balls.
Roll the balls in shredded coconut and place on a tray until set and ready to eat. You can keep them in an airtight container in the fridge.

140g rolled oats
120g almonds
1 tablespoon chia seeds
4 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1 teaspoon turmeric powder
Pinch black pepper
Desiccated coconut
