Chocolate Nourish mousse

Soft and comforting, this makes a wonderful pudding for anyone with a sore mouth or swallowing difficulties. This recipe contains raw eggs so shouldn’t be eaten by young children, if you are pregnant, older adults, and those living with compromised immune systems. 

For a lighter, egg-free version, replace the eggs with 100ml whipped cream, folded into the Chocolate Nourish Drink and eaten immediately.

Method

Gently heat the Chocolate Nourish Drink in a pan, until lukewarm.

Working quickly, add the egg yolks to the drink and stir with a spatula.

Whisk the egg whites until they form stiff peaks.

Fold a spoonful of egg whites into the chocolate mixture, gently folding in. Fold in the remaining egg whites carefully, being careful not to knock out the air bubbles.

Spoon the mix into ramekins or small glasses, cover and chill in the fridge overnight, until set.

Serve with fresh fruit.

1 carton (330ml) Chocolate Nourish Drink

2 eggs, separated

Fresh fruit, to serve, optional
