Brussels sprouts & nutmeg purée

Nutmeg goes wonderfully with the iron-rich flavour of Brussels sprouts. This purée is also wonderful served as a dip with bread sticks or crackers as a savoury snack or supper.

    5 minutes
  • Cooking time:
    10 minutes
  • Serves:


  1. Steam the sprouts for 10 minutes until tender.
  2. Blend with the butter and season to taste.
  3. Serve with the chicken and tarragon mousse.




  • 200g Brussels sprouts
  • 50g butter
  • A pinch of salt and nutmeg, to season
