Brussels sprouts & nutmeg purée
Nutmeg goes wonderfully with the iron-rich flavour of Brussels sprouts. This purée is also wonderful served as a dip with bread sticks or crackers as a savoury snack or supper.

Serves 4
Preparation Time: 5 minutes
Cooking Time: 10 minutes


  • 200g Brussels sprouts
  • 50g butter
  • A pinch of salt and nutmeg, to season


Steam the sprouts for 10 minutes until tender.

Blend with the butter and season to taste.

Serve with the chicken and tarragon mousse.
