Flavoured butters and spreads are a great way to add a bit of goodness to the much-loved slice of toast and humble sandwich.
Preparation time: about 5-15 minutes
BERRY BUTTER
50g softened unsalted butter
small handful of mixed berries
Squash the ingredients together with a fork or blitz to a purée, then leave to set in the fridge for 10 minutes.
GROUND SEED BUTTER
50g softened unsalted butter
4 tablespoons ground seeds
Squash the ingredients together with a fork and leave to set in the fridge for 10 minutes.
NUT BUTTER
50g softened unsalted butter
4 tablespoons toasted and finely ground mixed nuts
Squash the ingredients together with a fork and leave to set in the fridge for 10 minutes.
CHOCOLATE AND HAZELNUT SPREAD
4 tablespoons hazelnut or almond butter (available from health food shops)
1 teaspoon honey, maple syrup or rice syrup
1 tablespoon cocoa powder
Mix all the ingredients together until you have a smooth spread.
LEMON CHEESE SPREAD
250g ricotta
seeds from 1⁄2 vanilla pod
1 teaspoon honey or maple syrup
juice and zest of 1⁄2 lemon
Mix all the ingredients together until you have a smooth spread.
