Lavender Lemonade

A great option if you like cocktails with a floral flavour; all the sophistication without the alcoholic spirit.
  • Prep time:
    5 minutes, plus chilling
  • Serves:
    2

Method

  1. Bring water and honey to a boil.
  2. Chop the lavender flowers, add the crushed lavender to the pot, then remove it from the heat.
  3. Refrigerate for 2 hours. 
  4. Strain the liquid through a fine sieve. 
  5.  Stir in the lemon juice and serve over ice with a little sprig of lavender and slice of lemon 

Ingredients

400ml water

125g honey

5 tbsp dried lavender flowers 

125ml fresh lemon juice, strained
