Easy homemade mint sauce

Most bought mint sauce is made with malt vinegar, which can overpower the subtle flavours in lamb. If you have time, try making your own, using fresh mint and wine vinegar, which is much less pungent.


Serves 4
Preparation Time: 5 minutes

Ingredients

3 tablespoons fresh chopped mint

3 spring onions, extremely finely chopped

4 tablespoons white wine vinegar

4 tablespoons cold water


Method

Mix all the ingredients in a small bowl and serve as soon as possible, as the vibrancy and freshness of the mint fades with time.
