Cucumber, Coconut, Lime & Mint Cooler

Fresh and zesty, this makes a brilliant alternative to gin and tonic
  • Prep time:
    5 minutes, plus chilling
  • Serves:
    2

Method

  1. Combine coconut water, cucumber, lime juice, sugar and mint leaves. 
  2. Leave in the fridge for 3 hours. 
  3. Serve over ice  with a slice of lime and cucumber.

Ingredients

400ml coconut water

1 cucumber, sliced thinly

80ml lime juice 

80g brown caster sugar (optional)

30 chopped mint leaves
