Prep time:5 minutes, plus chilling
- Combine coconut water, cucumber, lime juice, sugar and mint leaves.
- Leave in the fridge for 3 hours.
- Serve over ice with a slice of lime and cucumber.
400ml coconut water
1 cucumber, sliced thinly
80ml lime juice
80g brown caster sugar (optional)
30 chopped mint leaves
