Apple and plum crumble with oat and seed topping

Fruity and nutty, this high energy crumble is delicious hot or cold. Add a dollop of custard, cream, or thick yoghurt for a creamy treat. The fibre-rich cooked fruits often sit more gently on an unsettled stomach. The cooking seems to soften the fibres as well as bring out the amazing flavours. Oats and seeds provide invaluable zinc and other B vitamins.

Apple and plum crumble with oat and seed topping

Preparation time: about 30 minutes
Cooking Time: about 20 minutes
Serves: 2 children and 2 adults

For the filling:
400g cooking apples, peeled and sliced
6 ripe red plums, stoned and sliced
2 tablespoons apple concentrate
pinch of cinnamon
pinch of mixed spice

For the topping:
50g rolled oats
2 handfuls of cornflakes
30g malthouse flour
2 tablespoons ground nuts (see below)
1 tablespoon linseeds
2 tablespoons maple syrup
2 tablespoons apple concentrate
2 tablespoon olive oil or Good Oil

Ground nuts mix
25g brazil nuts
25g blanched almonds
25g walnuts
25g macadamia nuts
25g pecans

Roughly chop all the nuts (this can be done by hand or in a processor). Put them on a baking tray and roast in a hot oven (180°C/Gas Mark 4) for 10 minutes. Allow them to cool and then grind to a powder in a spice grinder or using a pestle and mortar. Store in an airtight jar.


  • Preheat the oven to 200ºC/Gas Mark 6.
  • In a large pan stew the apples and plums in the concentrate with a splash of water. 
  • When the apples begin to soften, add the cinnamon and mixed spice. 
  • Pour into an ovenproof dish.
  • Mix the topping ingredients together and sprinkle generously over the filling. 
  • Bake for 20 minutes.
